When consumed, listeria can lead to an infection called listeriosis. Symptoms include fever, muscle aches, fatigue, stiff neck, confusion, loss of balance, and convulsions. Symptoms can occur right away or up to 10 weeks after eating food contaminated with listeria, the FDA says.
